My recipe
White chocolate mousse with matcha

- 180 g white chocolate
- 250 ml cream (33% fat)
- 1 tsp gelatin (2 - 2.5 g)
- 3 egg yolks
- 50 ml cream
- 2-3 tsp matcha
- chop the chocolate
- soak the gelatin in the cold water
- in a bowl set over simmering water, combine the cream (250 ml) and the chocolate
- stirring constantly melt the chocolate
- remove from the heat and cool down a bit
- squeeze the gelatin from the excess of the water and dissolve it in the cream and chocolate mixture, whisk lightly with the mixer
- warm up 50 ml cream and add in the matcha, stir well
- add the matcha into the cream and chocolate, whisking constantly add the egg yolks one after another
- pour into the serving bowls and leave to set for 3 hours
- serve sprinkled with the matcha
Thoughts and Ideas
The white chocolate and matcha tea is a perfect tastes marriage. This amount of gelatin makes the texture of the mousse very light, more like souffle.
